To celebrate vday, frosting, and dinner with my family, I decided to make yummy heart-shaped cupcakes this past weekend. To celebrate vday, drinking, and dinner with my family, I made them with Guinness. Chocolate and Guinness are soul mates. (NOTE: I am aware that these pictures are horrible. Sorry. I couldn't manage a good shot, and really just wanted to eat a cupcake....so I did.)
Cupcakes
- 2 eggs (room temperature)
- 1/2 cup yogurt (room temperature)
- 6 oz. Guinness
- 2 teaspoons vanilla
- 1/2 cup cocoa powder
- 1 cup sugar
- 1 1/4 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 6 tablespoons butter (melted)
Frosting
- 8 oz. cream cheese (softened)
- 4 tablespoons butter (room temperature)
- 3 1/2 cups powdered sugar
- 1 teaspoon vanilla
Here's what I did:
Cupcakes
- In your KitchenAid mixer bowl (or large mixing bowl) combine eggs and yogurt.
- Add Guinness and vanilla - mix thoroughly.
- In a separate bowl, mix together all dry ingredients.
- On low speed, blend about a third of the dry ingredients into the wet mixture.
- Mix the remaining dry ingredients into the batter, gradually, until fully incorporated.
- Mix in melted butter.
- Pour batter into prepared muffin tins (I used cute silicone hearts - spray them with Pam!).
- Bake at 350 degrees for 25 minutes (or until centers are set).
- Cool completely before frosting.
Frosting
- Beat together cream cheese, vanilla and butter until smooth.
- Gradually mix in the powdered sugar until frosting suits your fancy.
- Frost cupcakes and enjoy!
