VDay Cupcakes (booze included)


To celebrate vday, frosting, and dinner with my family, I decided to make yummy heart-shaped cupcakes this past weekend. To celebrate vday, drinking, and dinner with my family, I made them with Guinness. Chocolate and Guinness are soul mates. (NOTE: I am aware that these pictures are horrible. Sorry. I couldn't manage a good shot, and really just wanted to eat a cupcake....so I did.)


Chocolate Guinness Cupcakes
makes 12/adapted from this recipe

Here's what I used:

Cupcakes
  • 2 eggs (room temperature)
  • 1/2 cup yogurt (room temperature)
  • 6 oz. Guinness
  • 2 teaspoons vanilla
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 6 tablespoons butter (melted)

Frosting

  • 8 oz. cream cheese (softened)
  • 4 tablespoons butter (room temperature)
  • 3 1/2 cups powdered sugar
  • 1 teaspoon vanilla

Here's what I did:

Cupcakes

  1. In your KitchenAid mixer bowl (or large mixing bowl) combine eggs and yogurt.
  2. Add Guinness and vanilla - mix thoroughly.
  3. In a separate bowl, mix together all dry ingredients.
  4. On low speed, blend about a third of the dry ingredients into the wet mixture.
  5. Mix the remaining dry ingredients into the batter, gradually, until fully incorporated.
  6. Mix in melted butter.
  7. Pour batter into prepared muffin tins (I used cute silicone hearts - spray them with Pam!).
  8. Bake at 350 degrees for 25 minutes (or until centers are set).
  9. Cool completely before frosting.

Frosting

  1. Beat together cream cheese, vanilla and butter until smooth.
  2. Gradually mix in the powdered sugar until frosting suits your fancy.
  3. Frost cupcakes and enjoy!
