Orange Cranberry Cookies


This is my new favorite cookie recipe...and it doesn't even call for chocolate! It is super easy and will forever remind me of the first snow of 2009 (shout out v!). I meant to add walnuts to the yummy sweetness of the fruit, but completely forgot. I plan on making these over and over again so it'll happen. Orange cranberry cookies might turn out to be a common holiday gift from me to you (and you, and you, and you).

Orange Cranberry Cookies
makes about 3 dozen / adapted from this recipe

Here's what I used:

  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter (room temperature)
  • 1 cup sugar
  • 1 egg
  • zest of a large orange
  • 3/4 cup dried cranberries

Here's what I did:

  1. Mix together flour, baking powder, baking soda and salt - set aside
  2. Beat butter and sugar until fluffy
  3. Mix in orange zest and egg
  4. Add flour mixture, gradually, until just blended (keep mixer on low)
  5. Stir in cranberries
  6. Scoop dough using a tablespoon and place on lined cookie sheet
  7. Bake at 350 degrees for about 10 minutes (or until lightly brown around edges)
  8. Cool cookies on wire rack, then eat it!
