So I'm eating my last little blondie as I write...yum. This was a special order for the recent Mexicana Monday extravaganza - so much fun! The recipe I used is amazingly easy - and you can experiment with different additions as the mood strikes. I highly recommend using almond extract and white chocolate chips...holy hell yeah.
Blondies
makes about 20 blondie bites / adapted from this recipe
Here's what I used:
- 8 tablespoons butter (melted)
- 1 cup brown sugar (I used dark...it's my fave)
- 1 egg
- 1/2 teaspoon almond extract
- pinch salt
- 1 cup flour
- 1/2 cup white chocolate chips
- 1/2 cup pecans
- 1/2 cup shredded coconut
Here's what I did:
- Mix the melted butter and brown sugar until smooth.
- Blend in the egg and almond extract.
- Stir in the salt and flour.
- By hand, mix in the chocolate chips, nuts and coconut.
- Pour batter into a prepared 8x8 pan.
- Bake at 350 degrees for 25 minutes (or until firm in the middle).
- Cool on wire rack and eat it!
As a special sweet treat...here's the cutest blondie I know....
