What's better than eating a yum cookie? Eating two yum cookies. What's better than that? Eating two yum cookies stuck together with chocolate. This is the best invention ever. Enough said.
Chocolate Chip Cookie Sandwiches
serves a bunch...I lost count /adapted from this recipe
Here's what I used:
Cookies
- ½ cup butter
- 1 cup brown sugar (I used dark brown sugar - this is so the way to go)
- 1 egg
- 1 tsp vanilla extract
- 1 cup + 2 tbsp flour
- 1 tsp baking powder
- 1/8 tsp baking soda
- ½ cup coconut flakes
- 1 cup chocolate chips
Filling
- 1/3 cup whipping cream
- 1 ½ cups dark chocolate chips
(Next time I’ll put coconut in the filling too)
Here's what I did:
Cookies
- Beat together the butter and brown sugar until smooth.
- Add the egg and vanilla.
- Sift together the flour, baking powder, baking soda and coconut in a separate bowl.
- Gradually add the dry mixture into the butter and sugar until fully incorporated
- Stir in the chocolate chips.
- Drop teaspoonfuls onto prepared sheet and bake cookies at 375 degrees for 10 – 15 minutes (mine only needed 9 minutes because my oven has a mind of its own).
- Allow cookies to set on baking sheet before moving them to a wire rack to cool completely.
Filling
- Heat whipping cream on medium heat until sides begin the scald.
- Gradually add the chocolate until completely melted.
- Cool to room temperature.
- Make your cookie sandwiches and eat it!
