I firmly believe that everyone should have a homemade cake (or cupcake!) to celebrate a birthday. This holds true starting in kindergarten when moms bake late night treats for entire classrooms, and should continue through grown up responsibilities. These funfetti cupcakes were made in honor of my boss's birthday and to celebrate my love of sprinkles!
Funfetti Cupcakes

Here's what I used:
Cupcakes
- 1/2 cup milk
- 3 egg whites
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1 1/4 cup flour
- 1 cup sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 6 tbsp butter (room temperature)
- 2 1/2 tbsp sprinkles! (this is the fun part...you can change up the colors, size, etc. of the sprinkles)
Frosting
- 1 small jar of Fluff
- 8 oz. cream cheese (softened)
- 1 tsp vanilla extract
- sprinkles for decorating cupcake tops
Here's what I did:
Cupcakes
- Mix together egg whites, milk and extracts in a small measuring cup or bowl.
- Mix together flour, sugar, salt and baking powder in the bowl of your mixer (or a large bowl if you're using a hand mixer).
- With a pastry mixer, cut in the softened butter - you'll end up with a course consistency.
- Add the milk mixture and beat for about a minute and a half at medium speed.
- Stir in sprinkles with a flat spoon or spatula.
- Divide batter between 12 lined muffin cups.
- Bake at 350 degrees for 15 minutes or until a toothpick comes out clean.
- Cool completely before frosting.
Frosting:
- Blend fluff and cream cheese until smooth, about 1 - 2 minutes.
- Add vanilla and mix to incorporate.
- Spread on each cupcake, and top with sprinkles....then eat it!
