So the handsome lavender holder above is my new kitten Sugar....he's the sweetest thing around. Sugar spends his days jumping on every surface in my apartment, carrying around a green fuzzy mouse, and trying to nurse my 3 year old male cat. Sugar is cute, but oh so dumb.
Anyway, my dried lavender was making eyes at me the other night, so I decided to make a little lavender bread for my co-workers. I found a super easy recipe, and followed it pretty much word for word. You really can't mess up a basic tea bread. It was a little on the dry side, but a thin layer of yogurt butter fixed it up nicely.
Lavender Bread
makes 1 loaf / adapted from this recipe
Here's what I used:
- 3/4 cup milk
- 2 tablespoons dried lavender (the recipe called for fresh, but 'tevs)
- 6 tablespoons butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Here's what I did:
- Heat the milk and lavender together in a small saucepan on medium. Get the mixture to a simmer, and then remove from heat to cool.
- Cream together the butter and sugar until smooth, then add eggs and beat until light and fluffy.
- In a separate bowl, mix together the flour, baking powder, and salt.
- Mix the dry ingredients into the butter mixture alternately with the milk/lavender until just incorporated.
- Pour batter into a 9" x 5" greased bread pan and bake at 325 degrees for about an hour.
- Cool bread on a wire rack and then eat it!
