Blueberry Banana Bread


I had this overpowering craving for banana bread last week and ran across a recipe that includes blueberries. After being on the receiving end of baked goodness recently that included blueberries (thank you S), I was in the mood for more and excited to try this combo. It was the perfect match of sweet fruit and the bread itself was moist and perfectly done. I typically do smaller bread pans when making any kind of banana bread to ensure an even bake. This recipe turned out four mini loaves that were perfect for sharing.

Blueberry Banana Bread
makes 4 small loaves/adapted from this recipe



Here's what I used:
  • 1/2 cup butter, room temperature
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 2 large bananas, mashed
  • 1/2 cup walnuts, chopped
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh blueberries
Here's what I did:
  1. Mix together butter and sugar.
  2. Beat in eggs.
  3. Add in mashed bananas.
  4. Stir together flour, baking soda and salt (reserve 2 tablespoons of flour to coat blueberries) in a separate bowl.
  5. Fold dry mixture into banana mixture and add vanilla.
  6. Coat blueberries with the 2 tablespoons of flour, and stir into batter.
  7. Add walnuts and mix to combine.
  8. Pour batter into 4 mini bread pans (spray pans with baking spray first).
  9. Bake at 325 degrees for about 50 minutes or until toothpick comes out clean.
  10. Cool completely before cutting.
